Homegrown Ontario Lamb Burgers

One bite of this Mediterranean burger will take you right to a taverna by the sea. Enjoy with a traditional Greek salad and your taste buds will scream Opa!

1 1/2 lbs (750 g) ground Homegrown Ontario lamb
1/2 medium onion, finely minced
1 tbsp Dijon mustard 15 mL
1/4 cup (50 mL) chopped fresh parsley
2 tbsp (30 mL) finely chopped fresh mint
2 tsp ( 10 mL) chopped fresh oregano
1/2 tsp (2 mL) each, salt and pepper
4 hamburger buns

Garnishes: tzatziki, crumbled feta, thinly sliced red onion, olive slices, lettuce, cucumber slices and tomatoes

In a large bowl, use fork to gently combine the lamb, onion, Dijon, parsley, mint, oregano, salt and pepper. Gently form into four 1-inch (2.5 cm) thick patties.

Heat grill to high. Place the patties on the hottest part of the grill and sear until browned; 1 to 2 minutes per side. Move the patties to the cooler part of the grill and continue grilling until desired doneness, 4 to 8 minutes per side.

Place burger on spilt bun and garnish as desired.
