The blueberry bush (Vaccinium) is a Native North American Species. Early settlers used the fruit in their diet by incorporating it into a variety of foods and medicine. North America is the largest producer of blueberries and accounts for about 90% of the world’s crops.
The usually deep purple roots of beetroot are eaten either boiled, or roasted as a cooked vegetable, cold as a salad after cooking and adding oil and vinegar, or raw and shredded, either alone or combined with any salad vegetable.
Over 130 varieties of green bean are known. Varieties specialized for use as green beans, selected for the succulence and flavor of their pods, are the ones usually grown in the home vegetable garden, and many varieties exist.
